Beat together 225g softened butter, 225g soft light brown sugar and 200g granulated sugar.

It will become quite light and fluffy but it has a lot of sugar so it may well be a bit granular still.

Add 2 eggs and beat again.

Then add 260g plain flour, 260g oats and 1 tsp bicarbonate of soda.

And mix gently until the ingredients are combined.

Press about 1/2 to 2/3 of the mixture into a well greased and base lined tin.

Next put 175g dark chocolate, 1 tsp vanilla extract and 120g butter into a bowl placed over a pan of simmering water.

Add a tin of condensed milk.

And stir until all the ingredients have melted and become combined.

Spread the chocolate over the top of the flapjack.

Then crumble over the remaining flapjack mixture.

And bake at 150C (fan) for about 30 minutes until the flapjack is becoming golden.  Leave to cool completely in the tin; at least a couple of hours but overnight is better as the chocolate takes a while to set.

When cool cut into squares and enjoy!
