Lemon Muffins

Muffins are my favourite thing to bake when I have little time and few ingredients.  These lemon ones just use a few basic products that I usually have to had without having to make a trip to the shops.

First mix together some plain flour, baking powder and lemon zest.

The very gently just mix in some beaten egg, sunflower oil (or melted butter), milk and lemon juice.

Spoon equal amounts into twelve lined muffin tins – I use an ice cream scoop for this – and bake until golden and springy to the touch.  It is obvious from this picture that my oven does not cook evenly even though I rotate the tin during cooking.

Finally, the hot muffins are iced using the juice from the lemon that was zested earlier and icing sugar mixed to a smooth, runny paste.
