These cakes are like an enormous after dinner mint.  The cake at the bottom is moist and the mint and chocolate layers are decadent.

The recipe is another one from the BBC Good Food website.

First melt some chocolate and leave it to cool a bit.

Whilst the chocolate is cooling beat some egg with some caster sugar – if it looks like this, still dark yellow and runny it’s not ready.

When it looks like this, paler and thicker it is ready.

Fold the chocolate into the egg mixture.

Then add some sifted plain flour, baking powder and cocoa.

Put this mixture into a lined baking tin and bake.

Leave to cool in the tin.

Whilst the cake is cooling make the mint layer.  Chop some white chocolate into small pieces.

Heat some double cream and stir in the white chocolate, a little green food colouring and some mint flavouring.

When the cake is cool pour the mint layer on top and leave to cool again.

When it has cooled make the chocolate layer by warming together dark chocolate, syrup and butter.  When this has cooled enough not to melt the mint layer pour it on top and level.  Leave to cool again.

Cut into pieces.  The recipe suggests cutting it into 9 but they would be massive pieces.  I actually made mine in a 20 x 20 cm tin and cut it into 16 squares then cut each square in half to make a triangle and 32 pieces.  As usual I was in a hurry.  The cake wasn’t quite cool enough when I cut it but I had a birthday party to take it to!

    • Thank you. They are really lovely and I’ll be making them again. They remind me of a cake my granny used to make that had 4 layers – just normal sponge, layers of green minty cake and 2 layers of chocolate cake with chocolate butter icing in between and on top. I may have to make that next….
