Ultimate Chocolate Cake

This is based on another recipe from the BBC Good Food website.  It was made as a birthday cake for my husband and is decedent and delicious!

First melt together 200g dark chocolate, 200g butter, 125ml water and 1 tbsp coffee granules over a very low heat.

Stir until they are all well blended together.

Whisk together 3 eggs and add 75ml buttermilk.

Put 85g self raising flour, 85g plain flour, 1/4 tsp bicarbonate of soda, 200g light muscovado sugar, 200g caster sugar and 25g cocoa.

Use your fingers to mix all the ingredients together and get rid of any big lumps of sugar.

Mix together the chocolate mixture with the egg mixture – make sure the chocolate is not too warm or the egg will scramble!

Then add the flour mixture and stir until blended.

Divide between 2 greased and lined 20cm cake tins.

Bake at 140C fan for about 40 minutes (the Good Food website makes it as one big cake and bakes it for longer) until springy to the touch and cooked through. Then leave to partly cool in the tin then turn out onto a wire rack to cool completely

When the cake is cool make the chocolate ganache to use for icing.  Over a low heat warm 284ml double cream with 2 tbsp caster sugar and stir until the sugar is melted.

Remove from the heat and stir in 200g dark chocolate.

Leave to cool until thick enough to spread then use some to sandwich the two cakes together.

Use the remaining ganache to cover the top of the cake.

I decided to make mine into rough peaks and I sprayed it with a light coating of edible shimmer spray!
