These chocolate chip cookies are delicious and really simple to make. They are crunch at the edges and slightly chewy in the middle. The recipe is from the BBC Good Food website.

Chocolate Chip Cookies
These cookies are a favourite of my children. They are a crunchy cookie with a lovely buttery flavour.
Chocolate Chip Slab Cookies
These are a family favourite and use just a few store cupboard ingredients.
First butter and light brown sugar are creamed together until they are light and really fluffy.
Next plain flour is mixed in to make a fairly solid dough.
I then chopped some plain chocolate (I use Sainsbury value dark chocolate – it is pretty good and much cheaper than chocolate chips).
The chocolate chips are stirred into the dough.
The dough is pressed into a lined tin (it doesn’t need to be lined, it is just much easier).
Then baked until fairly firm and golden.
I leave it to almost fully cool in the tin, then remove it with the lining paper and cut it into rectangles. It should be cooled fully before putting in a tin to store.
Dark Chocolate Chunk Cookies

This is a recipe from the fabulous book Short & Sweet by Dan Lepard.
Butter and sugar are beaten together with some vanilla extract until the mixture is light and fluffy. Egg is beaten in then sifted flour, cocoa and raising agents are added and mixed to bring together to a soft dough. Finally chocolate is chopped up and the pieces mixed in. Small balls of the dough a spaced well apart on baking sheets and they are baked until slightly puffed up and darker at the edges.
They are lovely as they are or, for a treat, they are great sandwiched together with mint choc chip ice cream!
